Eggless Chocolate Cake

This recipe was given by a friend's mother. The entire procedure from putting the ingredients to the baking time all was done in just about 20-25 minutes.
This is the easiest cake that I have ever made!!

Ingredients-

  • 1 cup - Sugar
  • 1 & 3/4 cup - Maida (white flour)
  • 3/4 cup - Refined oil
  • 1 cup - Curd
  • 4 tsp (heaped) - Cocoa powder
  • 2 tsp (heaped) - Drinking chocolate
  • 1/2 tsp - Coffee 
  • 2 & 1/2 tsp - Milk
  • 1 tsp (leveled) - Baking soda
  • 1-2 tsp - Vanilla essence

Method-
  1. For baking in a MICROWAVE-
  • Mix all the above ingredients and mix well.
  • Put a clean paper in the baking dish. Press the paper to take the dish's shape.
  • Grease the paper in the dish using a little oil.
  • Pour the batter evenly.
  • Bake at 200 degree for about 10 minutes.
  • [Please check the cake after about 6-7 minutes as it takes different time in different microwaves.]
  • Let it cool for 5-7 minutes before taking it out of the baking dish.
    2.  For baking in an OVEN-
  • Mix all the ingredients and mix well.
  • Grease and dust the baking dish.
  • Pour the batter evenly.
  • Bake at 220 degree for about 30-40 minutes.
  • [It may take more than the time stated to bake it in an oven.]
  • Let it cool for around 10 minutes before taking it out of the dish.

Eggless Suji Cake



Ingredients-

  • 1 cup - Suji
  • 1/2 cup - Aata (Wheat flour)
  • 1/2 cup - Maida (White flour)
  • 1/2 cup - Curd
  • 8-10 strands - Kesar (Saffron)
  • 1 tsp - Baking Powder
  • 1/2 tsp - Baking Soda
  • 1 cup+2 tbsp - Powdered Sugar
  • 1/2 cup - Milk
  • 1/2 cup - Oil/ Butter
  • 4-5 - Elaichi (Green cardamom) - powdered
  • Handful of Almonds- Grated


Method-

  • Sift together suji, aata, maida, baking powder and baking soda. Keep aside.
  • In a big bowl, combine curd, butter/oil and sugar.
  • Stir until sugar is fully dissolved.
  • Add the sifted mixture, kesar, elaichi powder, grated almonds and milk.
  • Beat into a smooth mixture.
  • Grease the baking tin. (DO NOT DUST)
  • Preheat oven to 200 degree.
  • Evenly pour batter into baking tin.
  • Sprinkle some remaining grated almonds on top.
Bake for around 30 minutes!!!

Dark Chocolate Cake


OK, there is no oozing melted chocolate....But this one tastes just like Choco-lava!!!  

Ingredients-

  • 3/4 cup- melted white butter
  • 1/2 tsp- vanilla essence
  • 3/4 cup- sugar
  • 3- eggs
  • 3/4 cup- maida
  • 1/2 tsp- baking powder
  • almst 3/4 cup- cocoa powder
  • 2-4 tsp- drinking chocolate
  • approx. 1/2 cup- milk
  • approx. 2 sq. inch piece- Cooking Chocolate

Method-
  1. Sieve maida, baking powder, cocoa powder & drinking chocolate 3-4 times. Keep aside.
  2. Beat sugar, butter & vanilla essence till pale white in color.
  3. Add eggs & beat again till pale white in color.
  4. Add the sieved mixture slowly.
  5. Also keep adding milk gradually.
  6. Beat till smooth (atleast 15min).
  7. Add cooking chocolate & beat for a few more minutes.

  • Grease and dust baking tin. 
  • Pour the batter evenly.
  • Bake at 150-170 degree for around 45 minutes.

Plain Sponge Cake

Ingredients-


  • 1 tin- Milkmaid (Condensed Milk)
  • 2 cups- Maida (White flour)
  • 2 heaped tsp- Custard powder (Vanilla flavour)
  • 1 n 1/2 tsp- Baking Soda (leveled)
  • 2 tsp- Baking Powder (leveled)
  • 1 tsp- Vanilla essence
  • a little over 1 tin of milkmaid tin- Water
  • approx. 3/4 cup- White Butter


Method-
  1. Sieve maida, custard powder, baking soda and baking powder in a bowl.
  2. Add milkmaid, vanilla essence and butter.
  3. Beat the mixture while gradually adding water.
  4. Beat for at least 20min

  • Preheat oven for a few minutes.
  • Grease and dust baking tin. pour the batter evenly.
  • Bake at 160 degree for around 30 min.
